Sautéed Chicken Peppers and Onions

Sauteed Chicken, Peppers and Onions is a great way to spice up that dull old chicken flavor.  For this recipe we will use Colored Peppers (whatever you have available), Sweet Onions, Boneless Chicken Meat (Breast, Thighs or a combo) and saute all of that in a Fajita Seasoning.  Serve over warm Pita Bread with a tomato and vegetable salad.

Cooking Steps

  1. Prepare the marinade according to package directions and mix with the chicken in in a shallow pan or ZipLock™ bag.  Place in refrigerator and let soak for 1-2 hrs.
  2. Heat a heavy cast iron with a few tablespoons of oil.  Drain the chicken and dispose of the marinade (DO NOT Reuse!).  Saute the chicken in the hot skillet until almost done.
  3. Add the sliced Onions and Peppers.  Cook quickly but not all the way through.  You want the vegetable firm.  The chicken at this should be cooked thoroughly.
  4. Heat the Pita Breads in the Oven or Microwave.  Split in half and fill pocket with sauteed chicken and vegetables.  Serve with a Salad.  Enjoy!

1 to 1 ½ lbs of boneless chicken meat cut into strips.


1 Red, Yellow, Orange or Green Sweet Pepper cleaned and cut into strips..

1 medium Red Onion sliced into strips.

2 oz. Cooking Oil (Can be Vegetable, Canola, Soy, Olive or and good Oil).  We recommend a good Olive Oil.

Package of your favorite Fajita Seasoning.  If you do not like Fajita Seasoning use anything you like.
